You will need:

  • 1 stick of very cold unsalted butter (113.5 g or ½ cup) cut into ½ inch cubes 
  • ¾ cups plus 2 tbsp of heavy cream or ¾ cups buttermilk 
  • 1-2 bananas of any ripeness, in ½ inch slices, 
  • 3 tbsp of coarse or granulated sugar if desired
